Chicken! It’s everywhere in Singaporean cuisine and the food scene. From ayam goreng to chicken rice, Singapore has no shortage of chicken dishes.
But today I’ll be telling how you can make a favourite, Chicken Chop with black pepper sauce!
The first step, of course, is that you will need to obtain chicken from several fresh chicken supplier Singapore has to offer. The part of the chicken you will be using is the thigh, it is recommended that you debone the chicken, you can ask the butcher to do that!
You have the choice of either frying or grilling the thighs, but we shall proceed with the healthier option, so grilling is the way to go. You can season the chicken with some lemon and maybe some black pepper or other herbs. Toss the chicken into the very lightly oiled pan and grill it till it is done.
Now for the sauce. In a small bowl, mix in a teaspoon of Sweet Soy Sauce, a teaspoon of Worcestershire sauce, a teaspoon of brown sugar, half a teaspoon of black pepper, a quarter teaspoon of salt, a teaspoon of corn-starch and three tablespoons of water, mix them well.
In a separate pan for the sauce, melt a tablespoon of butter in medium-low heat and 2 teaspoons of olive oil. Throw in half of a diced onion and a clove of chopped up garlic, sauté the onions and garlic until the onions have turned soft.
Add the mixture in and let the sauce simmer till it becomes thick. Pour the sauce over your cooked chicken and boom! You’re done! You can serve this with a side of sweet potato fries or salad. If you want a healthier option, I’d suggest you go for a simple salad to eat alongside your chicken chop.
